Happy Valentines!

I decided to try out my Mother-in-laws recipe for Eclairs and they turned out pretty good. I hope everyone had a great Valentines.


Here is the recipe:

Eclairs

½ c. butter or margarine
1 c. boiling water
1 c. flout
½ tsp. Salt
4 Eggs

Combine water and butter in a saucepan. Cook over medium heat until butter melts. Add flour and salt and continue cooking, stirring continuously, until mixture forms a ball and pulls away from the sides of the pan (this only takes a minute or two). Remove from heat. Add eggs one at a time, mixing well with an electric mixer after each egg. Form éclairs onto a lightly greased cookie sheet or one lined with parchment paper, by pushing mixture through the open end of a pastry bag that does not have a tip on it. Bake at 400 for 20-30 minutes (depending on your oven and size of éclair). Cool and fill with pudding mixture. To fill éclairs, push pudding mixture into the end of the éclair using a pastry bag with a long nosed pastry tip or slice horizontally and fill. Frost with chocolate frosting.

Pudding mixture

2 small pkgs vanilla instant pudding
1 envelope Dream Whip
3 cups milk
1 tsp. vanilla

Mix Dream Whip with ½ cup of the milk and the vanilla. Add remaining milk and vanilla pudding mix. Mix for 2 minutes on medium speed.
